Ingredients

  • 240 g (1 cup) Sourdough Starter, active
  • 356 g (1½ cups) Water, warm
  • 508 g (4 cups) Bread Flour
  • 12 g (1 tbsp 1¼ tsp) Diamond Crystal Kosher Salt

Instructions

  1. 1Mix starter and warm water.
  2. 2Add flour and salt, mix until shaggy dough forms.
  3. 3Let rest 30 minutes.
  4. 4Perform 4 sets of stretch and folds, 30 minutes apart.
  5. 5Bulk ferment 4-6 hours at room temperature.
  6. 6Pre-shape and rest 30 minutes.
  7. 7Final shape and proof overnight in refrigerator.
  8. 8Bake in Dutch oven at 450°F for 45 minutes.
