- 400 g (8 Eggs) Eggs, large, hard-boiled
- 123 g (½ cup) Plain Whole-Milk Yogurt, strained, such as Greek-style
- 27 g (2 tbsp) Olive Oil
- 3 g (½ tsp) Coarse Salt
- 1 g (¼ tsp) Black Pepper (ground)
- 33 g (¼ cup) Chopped Diced Minced Celery, finely chopped; plus leaves for garnish
- 30 g (2 tbsp) Water, as needed
- 1Cut the hard-boiled eggs in half lengthwise; remove the yolks and place them in a large bowl. Set the egg white halves aside. Add the yogurt, olive oil, salt and pepper to the bowl with the yolks; whisk until smooth and creamy.
- 2Roughly chop the reserved egg white halves and the remaining eggs. Add to the yogurt mixture along with the chopped celery. Fold until creamy and evenly combined. Stir in up to tablespoons water, as needed, to reach the desired consistency. Garnish with celery leaves, if desired.
