  • 240 g (1 sheet) Puff Pastry Sheet, thawed
  • 220 g (2 cups) Apple
  • 50 g (¼ cup) Granulated Sugar
  • 28 g (2 tbsp) Brown Sugar (packed)
  • 3 g (1 tsp) Cinnamon (ground)
  • 15 g (1 tbsp) Lemon Juice
  • 7 g (0.1 sticks OR 1 tbsp) Butter
  • 50 g (1 Egg) Eggs, for egg wash
  • 15 g (⅛ count) Apricot Jam, optional, for glaze

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a medium bowl, combine diced apples, granulated sugar, brown sugar, cinnamon, lemon juice, and diced butter. Toss gently to coat.

    On a lightly floured surface, unfold one puff pastry sheet and cut into 4 equal squares. Repeat with the second sheet.

    Arrange the pastry squares on the prepared baking sheet. Spoon about 2 tablespoons of the apple filling onto the center of each square.

    Brush the edges of each pastry square with the beaten egg. Fold one corner over to the opposite corner to form a triangle and press the edges firmly with a fork to seal.

    Brush the top of each turnover with the remaining egg wash. Use a sharp knife to cut two small slits in the top of each for steam release.

    Bake for , or until the turnovers are puffed and golden brown.

    If desired, brush the tops with warmed apricot jam immediately after removing from the oven to create a glossy glaze.
