  • 57 g (½ stick OR 4 tbsp) Butter, room temperature, 113g
  • 100 g (2 Eggs) Eggs, large
  • 394 g (1¾ Bananas) Banana (Mashed), mashed, ripe, 430g
  • 4 g (1 tsp) Vanilla Extract

    Preheat oven to 350°F. Grease a 9x5-inch loaf pan with butter or baking spray.

    In a medium mixing bowl, whisk together the flour, baking soda, salt, and cinnamon.

    In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the brown sugar and butter together on high speed until light and fluffy, .

    Beat in the eggs one at a time, stopping to scrape down the bowl between each. Beat in the vanilla extract. Mix in the mashed bananas, then add the dry ingredients and fold together until just combined.

    Pour the batter into the prepared loaf pan.

    Bake for or until a wooden pick inserted into the center comes out clean. Let cool in the pan for , then remove and finish cooling on a wire rack.
