  • 14 g (⅛ stick OR 1 tbsp) Butter, unsalted
  • 80 g (½ cup) Chopped Diced Minced Sliced Onion, finely chopped
  • 227 g (1 cup 14 tbsp ¾ tsp) Canned Sliced Brown Mushrooms, thickly sliced
  • 3 g (1) Minced Garlic Cloves, minced
  • 8 g (1 tbsp) All-Purpose Flour
  • 240 g (1 cup) Beef Broth
  • 174 g (¾ cup) Heavy Whipping Cream
  • 61 g (¼ cup) Sour Cream
  • 8 g (1 tbsp) Worcestershire Sauce
  • 1 g (½ tsp) Dijon Mustard
  • 3 g (½ tsp) Table Salt
  • 1 g (¼ tsp) Black Pepper (ground)
  • 50 g (¼ count) Green Onion, for garnish
  • 227 g (4 cups 2½ tsp) Egg Noodles, optional, for serving

    Heat a large deep pan or Dutch oven over medium-high heat. Add the olive oil and once it is very hot, add the steak strips in a single layer. Cook until browned on each side, working in batches to avoid overcrowding. Remove the beef and keep warm.

    Add the butter, chopped onion, and sliced mushrooms to the pan. Sauté until the liquid has evaporated and the vegetables are soft and lightly browned.

    Stir in the minced garlic and cook until fragrant. Sprinkle in the flour and stir constantly to combine.

    Pour in the beef broth, scraping up any browned bits from the bottom of the pan. Add the heavy whipping cream and simmer until the sauce is slightly thickened.

    Temper the sour cream by stirring a bit of the hot sauce into it, then add it back into the pan, stirring constantly. Stir in the Worcestershire sauce, Dijon mustard, salt, and pepper. Continue to simmer until the sauce is creamy.

    Return the beef and any accumulated juices to the pan. Stir to combine and heat through. Garnish with sliced green onion and serve over egg noodles if desired.
