- 280 g (2 Chicken Breasts) Chicken Breasts
- 6 g (1 tsp) Coarse Salt, plus a pinch to finish, for seasoning
- 63 g (½ cup) All-Purpose Flour, for dredging
- 27 g (2 tbsp) Olive Oil, for frying
- 25 g (8.3) Minced Garlic Cloves, finely minced
- 30 g (¼ cup) Capers, drained
- 3 g (1¼ tsp) All-Purpose Flour, for sauce
- 200 g (13 tbsp 1¾ tsp) White Wine, preferably Chardonnay
- 100 g (6 tbsp 2 tsp) Chicken Stock
- 10 g (2 tsp) Lemon Juice
- 75 g (¾ stick OR 5 tbsp) Butter, cold, cut into tablespoon-sized cubes
- 5 g (2 tsp) Chopped Minced Fresh Parsley, chopped
- 42 g (0.5) Lemon, zest
- 1Slice each breast in half horizontally, then pound each piece into a 1/4"-thick cutlet.
- 2Season both sides with salt and pepper and let rest .
- 3Dredge cutlets in flour and let rest , then dredge again just before cooking for a crispier crust.
- 4Heat olive oil in a 12" pan over medium-high heat and fry cutlets per side, pressing down with a spatula for the first ; remove and set aside, then wipe out excess oil and brown bits.
- 5Return pan to medium-low heat, add capers and cook until they soften and color a bit.
- 6Add garlic with a touch more oil and cook on medium-low, stirring constantly to prevent burning.
- 7Sprinkle in flour and stir to combine.
- 8Pour in white wine, scrape up any browned bits, and reduce until nearly dry, .
- 9Add chicken stock and reduce by half, .
- 10Remove pan from heat, stir in lemon juice, then whisk in cold butter cubes a few at a time until the sauce is glossy and smooth.
- 11Stir in parsley and lemon zest, taste and adjust salt, then spoon sauce over cutlets and serve immediately.
