Ingredients
- 300 g (2½ cups) Bread, cubed
- 119 g (½ cup) Water
- 183 g (¾ cup) Lemon Juice, fresh
- 3 g (0) Lemon, zest
- 85 g (¾ stick OR 6 tbsp) Butter, softened
- 150 g (¾ cup) Granulated Sugar
- 34 g (2 large) Egg Yolks
- 66 g (2 large) Egg Whites, for meringue
- 50 g (¼ cup) Granulated Sugar, for meringue
Instructions
- 1Preheat oven to 350°F (175°C). Grease a casserole or baking dish.
- 2In a saucepan, combine cubed bread, water, lemon juice, and lemon zest. Bring to a simmer and scald the bread, then remove from heat.
- 3In a bowl, cream together softened butter, ¾ cup granulated sugar, and the egg yolks until light and fluffy.
- 4Fold the scalded bread mixture into the butter–sugar–yolk mixture until evenly combined.
- 5Pour the pudding mixture into the prepared casserole dish and smooth the top.
- 6Bake in the preheated oven at 350°F for 35 minutes.
- 7While the pudding bakes, beat the egg whites with 4 tablespoons granulated sugar until stiff peaks form to make the meringue.
- 8After 35 minutes, remove the pudding from the oven and immediately spread the meringue over the top.
- 9Reduce oven temperature to 300°F (150°C) and return the pudding to bake for an additional 18 minutes, until the meringue is lightly golden.
- 10Allow to cool slightly before serving.
