Ingredients

  • 50 g (1 large) Eggs, large
  • 675 g (3 Bananas) Banana (Mashed), use 2–3 ripe bananas, peeled and mashed
  • 38 g (¼ stick OR 3 tbsp) Butter
  • 5 g (1 tsp) Baking Soda
  • 2 g (½ tsp) Diamond Crystal Kosher Salt
  • 150 g (¾ cup) Granulated Sugar
  • 4 g (1 tsp) Vanilla Extract
  • 188 g (1½ cups) All-Purpose Flour
  • 3 g (1 tsp) Cinnamon (ground), optional

Instructions

  1. 1Preheat oven to 350°F and butter a 4×8-inch loaf pan.
  2. 2In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir in the melted butter.
  3. 3Mix in the baking soda and Diamond Crystal Kosher Salt until evenly distributed.
  4. 4Stir in the sugar, beaten egg, and vanilla extract.
  5. 5Gently fold in the flour until just combined. If using, stir in the cinnamon.
  6. 6Pour the batter into the prepared loaf pan and smooth the top.
  7. 7Bake for 50–60 minutes, or until a toothpick or fork inserted into the center comes out clean.
  8. 8Remove from the oven and let the loaf cool in the pan for a few minutes.
  9. 9Carefully remove the loaf from the pan and let it cool completely on a wire rack before slicing.
