- 675 g (3 Bananas) Banana (Mashed), use 2–3 ripe bananas, peeled and mashed
- 38 g (¼ stick OR 3 tbsp) Butter
- 5 g (1 tsp) Baking Soda
- 2 g (½ tsp) Diamond Crystal Kosher Salt
- 150 g (¾ cup) Granulated Sugar
- 4 g (1 tsp) Vanilla Extract
- 188 g (1½ cups) All-Purpose Flour
- 3 g (1 tsp) Cinnamon (ground), optional
Instructions
- 1Preheat oven to 350°F and butter a 4×8-inch loaf pan.
- 2In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir in the melted butter.
- 3Mix in the baking soda and Diamond Crystal Kosher Salt until evenly distributed.
- 4Stir in the sugar, beaten egg, and vanilla extract.
- 5Gently fold in the flour until just combined. If using, stir in the cinnamon.
- 6Pour the batter into the prepared loaf pan and smooth the top.
- 7Bake for 50–60 minutes, or until a toothpick or fork inserted into the center comes out clean.
- 8Remove from the oven and let the loaf cool in the pan for a few minutes.
- 9Carefully remove the loaf from the pan and let it cool completely on a wire rack before slicing.
