Ingredients

  • 340 g (2 cups 13 tbsp 1 tsp) Salsa Verde, mild, medium or hot
  • 120 g (1 count) Cannellini Beans, rinsed and drained
  • 283 g (2¼ cups) Corn Frozen, frozen
  • 160 g (1 cup) Onion, diced
  • 12 g (4) Garlic Cloves, minced
  • 28 g (¼ cup) Taco Seasoning, packet
  • 960 g (4 cups) Chicken Broth
  • 454 g (3.2) Chicken Breasts, boneless skinless
  • 120 g (1 count) Cilantro, for serving, optional
  • 120 g (1 count) Avocado, for serving, optional
  • 120 g (½ cup) Mozzarella Cheese, shredded, for serving, optional
  • 15 g (0.1 juices) Lime Juice, fresh, for serving, optional

Instructions

  1. 1Crockpot: Spray crockpot with non-stick spray. Place all ingredients into slow cooker besides chicken breasts. Stir to combine. Place chicken breasts in soup mixture.
  2. 2Cook for 4 hours on high or 8 hours on low.
  3. 3Remove chicken from slow cooker and shred chicken meat. Return to crockpot and stir to combine. Serve with toppings of choice and enjoy!
  4. 4Instant Pot: Place all ingredients into instant pot besides chicken breasts. Stir to combine. Place chicken breasts in soup mixture.
  5. 5Seal the pressure cooker with the lid. Select Manual (or Pressure Cook button depending on your instant pot model) and cook on high pressure for 25 minutes. It will take about 10 minutes for the instant pot to come to pressure before the timer counts down.
  6. 6When the cook time finishes, do a manual pressure release by turning the steam release knob to Venting. Open the lid, remove chicken from instant pot and shred meat. Return shredded chicken to soup and stir to combine. Serve with toppings of choice and enjoy!
