Ingredients
- 7 g (2¼ tsp) Instant Yeast, one packet
- 25 g (2 tbsp) Granulated Sugar, divided
- 245 g (1 cup) Milk, warmed to about 110°F
- 237 g (1 cup) Water, warmed to about 110°F
- 762 g (6 cups) Bread Flour
- 12 g (2 tsp) Table Salt
- 21 g (⅛ stick OR 2 tbsp) Butter, melted and cooled
- 5 g (1 tsp) Vegetable Oil, for greasing Pullman pan
Instructions
- 1In a small bowl, whisk together warmed Milk and warmed Water until combined.
- 2In the bowl of a stand mixer (or a large mixing bowl), whisk Bread Flour, Instant Yeast, 1 tablespoon Granulated Sugar, and Table Salt until evenly distributed.
- 3Add the milk-water mixture and melted Butter to the dry ingredients. Using the dough hook on low speed, mix until a rough shaggy dough forms, then increase to medium speed and knead for 6–8 minutes, until the dough is smooth and elastic. (Alternatively, knead by hand on a lightly floured surface for about 10 minutes.)
- 4Lightly grease a clean bowl with Vegetable Oil. Shape the dough into a ball, place it seam-side down in the bowl, cover with plastic wrap or a damp towel, and let it rise in a warm spot until doubled in size, about 1 hour.
- 5Punch down the risen dough, turn it out onto a lightly floured surface, and roll or shape it into a tight log to fit a 13" x 4" Pullman pan.
- 6Grease the Pullman pan (including the lid) with Vegetable Oil. Place the shaped dough seam-side down into the pan, secure the lid in place, and let the dough rise until it reaches about ¼" below the top of the lid, about 45 minutes.
- 7Meanwhile, preheat your oven to 375°F (190°C).
- 8When the dough has finished its final rise, place the lidded pan on the middle rack and bake for 20 minutes. Carefully remove the lid (watch for steam) and bake for an additional 15 minutes, or until the crust is light golden brown and an instant-read thermometer inserted into the center reads 190°F (88°C).
- 9Immediately remove the loaf from the pan and transfer it to a wire rack to cool completely before slicing.
