- 120 g (1 cup) Polenta (Medium Grain Cornmeal)
- 40 g (¼ cup) Mascarpone, 3 ounces
- 6 g (1 tsp) Coarse Salt
- 0 g (0 tsp) Ground White Pepper, freshly ground
- 45 g (3 tbsp) Gorgonzola Cheese, crumbled
- 29 g (¼ cup) Toasted Chopped Walnuts (Chopped), toasted lightly, chopped
- 5 g (2 tsp) Chopped Minced Fresh Parsley, minced fresh
- 1In a 2-quart heavy stainless steel saucepan bring milk to a boil over moderate heat, stirring occasionally with wooden spoon to prevent scorching.
- 2Add polenta in a slow stream, whisking constantly to prevent lumps.
- 3Whisk until the milk is absorbed.
- 4Reduce heat to very low (use of "flame tamer" is recommended).
- 5Cook polenta stirring with wooden spoon every , for , or until it is the consistency of firm mashed potatoes.
- 6Stir in mascarpone, salt and white pepper.
- 7Preheat broiler.
- 8Spoon polenta into 2-quart shallow baking dish and sprinkle Gorgonzola on top.
