  • 1 g (½ tsp) Garlic Powder
  • 80 g (10 tbsp) Tomato Paste, about 1/3 cup
  • 83 g (¾ cup) Ketchup, about 1/3 cup
  • 133 g (9 tbsp) Water, about 1/2 cup + 1 Tablespoon
  • 28 g (2 tbsp) Apple Cider Vinegar, about 2 Tablespoons
  • 2 g (¾ tsp) Dried Mustard Powder
  • 9 g (2 tsp) Brown Sugar
  • 3 g (1 tsp) Diamond Crystal Kosher Salt, scant

    Place a skillet or heavy-bottomed pan over low-medium heat. You want it to be warm, not hot. There should be no sizzle when the meat hits the pan.

    Add the ground beef and onion to the warm pan. Break the meat apart gently as it cooks. You are not browning; you are steaming. The meat should separate into fine, soft pieces. Cook until no pink remains, stirring occasionally.

    Add all remaining ingredients: tomato paste, ketchup, water, apple cider vinegar, dry mustard powder, brown sugar, salt, and black pepper. Stir to combine thoroughly.

    Bring to a boil. Reduce heat to low and simmer for , uncovered, stirring occasionally and breaking up the meat further each time. The mixture will darken, thicken, and reduce significantly.

    Taste and adjust salt and pepper at the end of the .
