- 100 g (2 Eggs) Eggs, large, room temperature
- 61 g (¼ cup) Lemon Juice, fresh, about 2 lemons
- 120 g (1 coloring) Gel Food Coloring, yellow, optional
- 4 g (1 tsp) Vanilla Extract
- 292 g (2¼ cups) Unbleached All-Purpose Flour
- 2 g (½ tsp) Baking Soda
- 50 g (¼ cup) Granulated Sugar, for coating
- 150 g (¾ cup) Coarse Sugar, for coating
- 1In a large mixing bowl, whisk together the granulated sugar, lemon zest, and salt. Rub the sugar and zest together with your fingers until the mixture feels like wet sand. Whisk in the melted butter, eggs, lemon juice, and vanilla until well combined. If desired, whisk in the gel food coloring for a brighter yellow.
- 2In a small mixing bowl, whisk together the all-purpose flour and baking soda. Fold the flour mixture into the sugar mixture with a rubber spatula until well combined. Cover and refrigerate for at least or up to .
- 3Preheat the oven to 350°F. Line two baking sheets with parchment paper.
- 4Place the granulated sugar and the powdered sugar in separate small bowls. Set aside.
- 5Scoop 12 balls of the chilled cookie dough (about 1½ tablespoons/28 g each). Cover and return the remaining dough to the refrigerator.
- 6Roll each dough ball between your palms to form a smooth ball. Coat first in granulated sugar, then in powdered sugar. Arrange the coated balls 1½ inches apart on one prepared baking sheet. If desired, dust lightly again with powdered sugar using a fine mesh sieve.
- 7Bake for , until the tops crack and the bottom edges are just starting to brown. Let cool on the baking sheet for , then transfer to a wire rack to cool completely. Repeat with the remaining dough.
