    In a large mixing bowl, whisk together the granulated sugar, lemon zest, and salt. Rub the sugar and zest together with your fingers until the mixture feels like wet sand. Whisk in the melted butter, eggs, lemon juice, and vanilla until well combined. If desired, whisk in the gel food coloring for a brighter yellow.

    In a small mixing bowl, whisk together the all-purpose flour and baking soda. Fold the flour mixture into the sugar mixture with a rubber spatula until well combined. Cover and refrigerate for at least or up to .
