- 340 g (2 cups 13 tbsp 1 tsp) Salsa Verde, jar (mild, medium or hot)
- 120 g (1 count) Cannellini Beans, rinsed and drained
- 283 g (2¼ cups) Frozen Corn Frozen, frozen
- 160 g (1 cup) Chopped Diced Minced Sliced Onion, large, diced
- 12 g (4) Minced Garlic Cloves, minced
- 28 g (¼ cup) Taco Seasoning, packet
- 907 g (3¾ cups) Chicken Broth
- 454 g (3¼ Chicken Breasts) Chicken Breasts, boneless, skinless
- 120 g (1 count) Cilantro, for serving
- 120 g (1 count) Avocado, for serving
- 240 g (1 cup) Shredded Mozzarella Cheese, shredded, for serving
- 15 g (0.1 juices) Lime Juice, fresh, for serving
- 1Crockpot:
- 2Spray crockpot with non-stick spray. Place all ingredients into slow cooker besides chicken breasts. Stir to combine. Place chicken breasts in soup mixture.
- 3Cook for on high or on low.
- 4Remove chicken from slow cooker and shred chicken meat. Return to crockpot and stir to combine. Serve with toppings of choice and enjoy!
- 5Instant Pot:
- 6Place all ingredients into instant pot besides chicken breasts. Stir to combine. Place chicken breasts in soup mixture.
- 7Seal the pressure cooker with the lid. Select Manual (or Pressure Cook button depending on your instant pot model) and cook on high pressure for . Don’t forget, it will take for the instant pot to come to pressure and then the timer to start counting down.
- 8When the cook time finishes, do a manual pressure release: turn the steam release knob to Venting to release any remaining pressure and open the lid. Remove chicken from instant pot and shred chicken meat. Return chicken to soup and stir to combine. Serve with toppings of choice and enjoy!
